If you are visiting the North of Thailand and especially Chiang Mai, you should go for a day tour in an elephant camp. Tour are organised directly from most hotels from Chiang Mai but you can also go by yourself by taking a taxi. The tour usually includes a ride in the forest (about 1 hour), elephant show (30 min).
You can also combine this tour with a bamboo rafting down the river to relax and to have a look on the wonderful nature. A bullock cart drive can also be done between the elephant terminal and a small traditional village.
The complete tour at the Elephant Camp including bullock cart ride and bamboo rafting takes about half day.
If you stay around Khao Lak (or any other place offering this kind of tour), we would recommend a jungle tour. These kind of day tour are a little bit different than the usually tour organised for tourists; usually organised for small groups, you will stay nearer to the nature than by taking part of other day tours.
A local guide leads a small group through the jungle and will show you the different tree species. With some luck, you will also be able to see some small animal (monkeys, snakes, spiders,....).
The feeling beeing close to the nature is something you need to experiment.
